Sweet potato, locally known as “khoai lang,” is a starchy tuber widely cultivated in tropical and subtropical regions. The tubers have a reddish-brown skin and orange, yellow, or purple flesh, depending on the variety. Sweet potatoes are versatile and can be boiled, roasted, steamed, fried, or used in desserts and snacks. They are rich in carbohydrates, fiber, and vitamins, particularly vitamin A.

Sweet potatoes are available year-round in tropical and subtropical regions, with peak harvest during the dry season.

- Storage Guidelines

Transport & Storage: Sweet potatoes should be stored at 12–16˚C in a dry, ventilated environment to prevent sprouting and decay.

In Store: Best displayed in dry, well-ventilated areas, avoiding exposure to moisture to preserve quality and shelf life.

- Planting and Harvest

At the farm

Sweet potatoes grow well in warm climates with sandy, well-drained soil. They are propagated via vine cuttings and usually take 3–5 months to mature, depending on the variety.

Tubers are harvested by hand when the leaves begin to yellow, carefully dug to avoid damage.

After harvest, sweet potatoes are sorted by size and quality, then packed in cartons or sacks, usually 10–20 kg, ready for distribution and sale.
